You think to yourself “I bought 10 pounds of apples at Ralph’s last week for just ten dollars. But now I have 9 pounds of apples wasting away in my fridge! What to do??”

Besides being absolutely delicious, this recipe is so easy to make. Double or triple the recipe and freeze the extra loaves for up to 60 days.
Raw Apple Cake
1 cup sugar
½ cup butter (softened)
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
1 cup chopped nuts
1 cup coconut
2 raw apples, sliced thinly
Preheat oven to 350 degrees. Liberally spray a 9” x 5” loaf pan with non-stick cooking spray. Combine sugar, flour, butter, nutmeg, cinnamon and baking soda. Add eggs. Mix in nuts, coconut and apples. Bake at 350 for 45 -60 minutes or until cake tester comes out clean.
The nuts and coconut are both optional in this recipe. The coconut provides a really great texture, but if you don’t have any on hand, don’t let that stop you from making it.
If you really want to make it decadent, top with homemade caramel sauce. Wow!!
